Pickled Shunkyo Radish

Ingredients:

  • 1 bunch Shunkyo radishes, sliced

  • ½ cup rice vinegar

  • ½ cup water

  • 1 tbsp sugar

  • 1 tsp salt

Directions:
Bring vinegar, water, sugar, and salt to a boil. Pour over sliced radishes in a jar. Cool, refrigerate, and enjoy after 1 hour (better after 1 day).

Crisp, sweet-spicy, and vivid pink.
